INGREDIENTS
A packet of okra
Curry powder, can be replaced by spices and tumeric
4 Cherry tomatoes
Garlic
Olive oil, salt
5 tbs of water
INSTRUCTIONS
Chop the garlic into either slices or minced
Slice the okra also into bite-size
Heat the pan
Lightly grease the pan with olive oil
On medium heat, add the garlic and stir until golden
Add the okra and tomato to slightly colour them
Add in curry powder and water and mix until fully dissolved
Close the lid and bring to a simmer on low-medium heat
Season by adding a pinch of salt, mix
Mixture will thicken
Once fully cooked, serve the dish with couscous or brown rice!
