Okra Curry with Cherry Tomatoes

Origin: India and Thailand


INGREDIENTS

  • A packet of okra

  • Curry powder, can be replaced by spices and tumeric

  • 4 Cherry tomatoes

  • Garlic

  • Olive oil, salt

  • 5 tbs of water


INSTRUCTIONS

  • Chop the garlic into either slices or minced

  • Slice the okra also into bite-size

  • Heat the pan

  • Lightly grease the pan with olive oil

  • On medium heat, add the garlic and stir until golden

  • Add the okra and tomato to slightly colour them

  • Add in curry powder and water and mix until fully dissolved

  • Close the lid and bring to a simmer on low-medium heat

  • Season by adding a pinch of salt, mix

  • Mixture will thicken

  • Once fully cooked, serve the dish with couscous or brown rice!
