Mediterranean Cauliflower Rice Salad

Origin: Greece and USA

Chilled dish: Cauliflower rice + salad

  • Seasoned cauliflower rice with lemon and parsley, herbs etc.

  • Rocket salad


For cauliflower preparation

  • 1 whole cauliflower

  • 2 tbs of olive oil

  • 1 small garlic

  • Pinch of salt, pepper, chili pepper

  • 1 tbs of fresh lemon juice

  • 1/3 cup of diced red or yellow pepper

For finish

  • 60g rocket salad

  • Drizzle of extra virgin olive oil


  1. Use a cheese grater, food processor or a simply a knife to cut the cauliflower into small crumbs, like couscous (Careful not to over blend it if using mixer)

  2. On a clean table cloth, spread out the cauliflower crumbs

  3. Cover with another table cloth, press down and dry out any liquid

  4. Dice the garlic

  5. In a pan on medium heat, pour olive oil to grease pan and stir with garlic

  6. Then add the cauliflower rice and cook until white colour becomes light yellow (careful not to overcook– 6 minutes is sufficient)

  7. Stir from time to time

  8. Turn stove off and add diced peppers and seasonings

  9. Add lemon/lime juice

  10. Remove from pan and set to cool

  11. Finally, add in the rocket and mix like a salad

  12. Finish with a drizzle of extra virgin olive oil
